Banquet Chef – Food and Beverage

Owl’s Nest Resort & Golf Club, located in Thornton, New Hampshire, is the state’s only Nicklaus Design golf course. Located on 600 acres, our resort community features 27 luxury rental homes, an on-site restaurant, new Sperry tent event facility, golf & retail shop and activity/fitness center. A dramatic expansion plan is underway to transition the resort to a four-season getaway with a wide array of activities and outdoor pursuits.

JOB SUMMARY

The Banquet Chef will demonstrate the skills to prepare meals according to the menu while leading the banquet kitchen team in cooking and delivering items in a timely manner to ensure a high-quality guest experience.

The Banquet Chef will supervise the banquet staff in the execution of culinary events, including weddings, golf outings and stay & play groups.

This is a year-round position that will average 30-40 hours per week during the months of May through October and generally less than 20 hours per week from November through April. Company benefits include Paid Time Off (PTO) and 401k.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Plans, schedules, and purchases accordingly based on Banquet Event Order
  • Leads the Banquet Kitchen Team in food preparation and presentation during all events
  • Supervises/manages the Banquet Kitchen Team to include efficient staffing, employee development & training and policy enforcement
  • Works directly with Event Coordinators and banquet service staff in execution of all events
  • Works in conjunction with ala carte kitchen staff
  • Offer solutions to problem areas in banquet kitchen and identify utensil needs.
  • Maintains a clean and sanitary banquet kitchen and storage areas, in accordance with NH state sanitation requirements and codes
  • Other duties within the scope of Banquet Chef may be assigned

KNOWLEDGE, SKILLS, AND ABILITIES

  • High school diploma or equivalent/ Culinary certification or degree preferred
  • Minimum two years supervisory experience in quality food & beverage production
  • Experience in multi-tasking of projects and project management
  • Self-motivated with excellent organizational skills and attention to detail
  • Ability to work in a team environment and to communicate effectively
  • Ability to function in a faced paced environment
  • Ability to work a flexible schedule including extended hours, weekends and holidays
  • Knowledge of food safety and handling in accordance with federal and state regulations, codes, and laws

WORKING CONDITIONS:

  • Must be able to lift and stack objects up to 20 pounds occasionally and frequently exert 10 to 20 pounds of force to lift, carry, or otherwise move objects.
  • Work involves frequent periods of standing and walking.
  • Work involves stooping, kneeling, crouching, twisting/turning, reaching, and bending at the waist.
