Meet the New Members of the Team!
Bradley “Brad” McCoil
With over 20 years as a chef, experience in overseeing multiple award-winning properties, and an honors graduate from Johnson and Wales, it goes to say that Brad McCoil has definitely made a name for himself in the hospitality industry in New England.
Before joining us at Owl’s Nest Resort, he was the General Manager of the Oceancliff Resort in Newport, RI. His past experience also includes working as Corporate Chef for IDC Inc. IDC is a high-end hospitality firm that operates Regatta Place, The Stonehouse in Little Compton, and the schooner “Aurora” in Newport, RI.
As General Manager at Oceancliff, Brad oversaw over 150 events per year with over $14 million in annual food and beverage revenue. The hotel itself produced $10 million in annual revenue. While at Oceancliff, Brad managed many weddings and dinner parties that included celebrities and politicians.
Brad will officially be joining the Owl’s Nest team on May 1, 2019. We are very excited to have Brad apply his impressive skills to our F&B and Event teams. You will be able to find Brad’s office at the Activity Center. Once the season is in full swing you will see Brad around Panorama 682, the Sports Nest, and various other locations at the Nest!
Fun Fact: Brad has cooked at, and been invited to the James Beard house not only once, but twice!
David “Rabbit” Rabbottini
Assistant Director of Golf
David Rabbottini is no stranger to the Owl’s Nest Resort, as he has worked for the past four years as a Starter/Ranger on our golf course. With a Master’s degree in Communications from Boston University, David has worked in a variety of environments. First, as the Alumni Director at Saint Anselm College, then as the Vice President for Commercial Lending at the former Amoskeag Bank. These career paths taught him how to work well in customer service, sales, and in leadership.
Rabbit’s goals are to keep a dedicated eye on golf operations, sales, and staff training. His passion and loyalty to Owl’s Nest Resort will be essential in our future golf-based projects. You will be able to find Rabbit with the golf team at the Sports Nest.
Fun fact: Rabbit is not only a golfer! During the winter, you can find him at Waterville Valley as a certified Ski Instructor.
Robert “Bob” Cooke
Director of Golf Operations
Bob, born and raised in the Skaneateles/Auburn, Finger Lakes area of New York, started his career in golf as an Assistant Professional, as many young men do. Bob worked at Coral Ridge Country Club (winter seasons) and Oakmont Country Club (summer seasons) both of which hosted multiple major golf championships. He learned under the tutelage of Hall of Fame golf professional, Lew Worsham, winner of the 1947 U.S. Open, and three-time Ryder Cup team member. Bob was named the Head Golf Professional at Mayfair Country Club in Sanford, FL, the spring training site of the MLB Giants, and home of the Mayfair Open, where Arnold Palmer scored his first PGA Tour win. The Mayfair Open eventually morphed into what is known today as The Bay Hill Invitational.
Bob Cooke recently completed fifteen years at a very successful golf course project in the Cayman Islands, as Director of Golf & Club Operations at The Links at Safehaven Golf Club. For six years, he was Director of Golf Instruction with Bighorn Golf Club, home of the PGA Tour “Skins Game”, and the Tiger Woods Shootout, in Palm Desert, CA.
Prior to Bighorn, Bob served six years as Director of Golf and Club Operations at Mullet Bay Resort & Casino, the 5-Star Resort in St. Maarten, NA. He initiated the Golf Instruction program at the PGA National Resort in Palm Beach Gardens, Florida (The “Bob Cooke Killer Golf” School). At PGA, Bob hosted a multitude of national championships for various amateur and professional golf associations for seven years.
He also served sixteen years as director and instructor with Golf Digest Bob Toski Instructional Schools, located throughout the U.S. In May 2018, Bob celebrated half a century (PGA of America Membership) in the golf management industry – 50 years of a commitment to excellence in performance. You will be able to find Bob with Rabbit, Laurie, and the golf shop crew at the Sports Nest.
Among his accolades are: PGA Professional of the Year; PGA Merchandiser of the Year; two times PGA Teacher of the Year, as well as being the recipient of the prestigious Horton Smith Award.
Fun fact: Bob has had the privilege of playing golf with seven sitting presidents!
